Terroir:
Parcel selection: schist, mica-schist, flint fragments, and low clay content.
Grape varieties:
Mainly Grenache, Cinsault, and Mourvèdre (5%).
Tasting note:
Eye: Salmon-colored hue with silver reflections, bright and elegant.
Nose: Subtle and refined, blending fresh citrus aromas, citrus peel, and a floral touch of hawthorn.
Palate: Fresh and delicate attack, enhanced by a saline minerality and a beautiful line of freshness. The finish is persistent and unfolds with rose notes.
Winemaking:
Cooling of the harvest, cold skin maceration, temperature-controlled fermentation in tanks, aging on fine lees. Fining and filtration before bottling.
