Terroir:
Parcel selection: schist, mica-schist, flint fragments, and low clay content.
Grape varieties:
Grenache (46%), Cinsault (45%), Mourvèdre (9%)
Tasting note:
Eye: Beautiful salmon-pink hue with silver reflections.
Nose: Elegant, dominated by citrus and gooseberry notes, with delicate hints of apricot, medlar, rose, and jasmine.
Palate: The wine presents a lovely, refined structure, blending volume and roundness to soften the acidity. A touch of white pepper and saline, iodized nuances enrich the profile, while the Mourvèdre provides a solid backbone and good balance. The finish, with great length, lingers with aromas of rose and citrus peel.
Winemaking:
Cooling of the harvest, cold skin maceration, temperature-controlled fermentation in vats, aging on fine lees. Fining and filtration before bottling.
